Rick gets a hand and Carol gets a finger. Traditionally the hand would mean stop, and the pointer finger means wait a minute or hold on. Why the different gestures?

I think it really shows how well and naturally he understands these two friends. He’s telling Rick not to intervene—not to attack Ty over this (though we see how well that goes). He’s telling Carol something different—he’s saying he’s got this, not to worry. That he’s ok. Without really thinking, Daryl gives them each the message tailored to how they act and how he knows them—Rick as a fighter and protector for the group, and Carol as an emotional support.
